Service was pront. Very accommodating. Our server Ivan was great. Recommended delicious drinks. Started with white queso dip, eh. Nothing fancy. Ordered drinks, AMAZING selection!! Then the fajitas for two. Delicious. Beautifully seasoned. Great atmosphere and even fellow diners tookpics of our drink! Well done

I will start by saying that all things equal service is our top requirement. We have been here when we had to wait for a table. Even on those occasions the staff has been great. Greeted with a smile and seated ASAP. The servers are all attentive and personable. I give The Colorado Grill a 5 in this respect. A close second is of course the food. In Hot Springs there are plenty of Tex-Mex restaurants. Loving Mexican food we have eaten at most of them. CC is in our opinion the best. I highly recommend their California Quesadilla. Their Poblano Peppers are possibly the best in the world. That may be a little hyperbole but they are really great. I give their food a 4 with a bullet. Now. This is a very old building. As far as cleanliness I give them a solid 4. They have managed to keep the floors and restrooms nice. If you are visiting Hot Springs do yourself a favor and give them an opportunity to impress you.

Excellent Mexican food. The salsa was to die for and I love that they offered each of us our own little bowls, since I tend to hog the salsa. ;) I had the "mixed fajitas" with chicken, beef and shrimp with tortillas, rice, beans and a plate of guacamole, sour-cream, lettuce and cheese. They were phenomenal! Came sizzling out and smelled like heaven! My husband had the chile rellenos with rice and beans. His words were "hands down, the best chile rellenos that I have ever had". So, yeah, it was great. Service was great, even though our waitress lingered and a tall waiter kept walking by and had some of the WORST body odor I have ever smelled. I should have said something but didn't want to embarrass him. Might want to fix that, guys! Overall, this place was in walking distance of our B&B and even after the lingering, too talkative waitress, Texas Tea (which was like 100% alcohol) and the smelly waiter, we'll be back the next time we are in Hot Springs.

We found CO Grill on Yelp and were very pleased. Thumbs up to the queso with meat, beef/chicken enchiladas, fajitas and nachos. We had a group of eight and our waitress was excellent. My only complaint was it was a bit hard to find. Keep your eyes open and you won't be disappointed.

Great little place as it surpassed my expectations. We were greeted at the door with a smile and seated immediately. The waitress came shortly after and took our drink orders and back shortly after that for our dinner orders. We were checked on numerous times throughout the night, maybe ten. The menu was simple but some unique items. We had quesadilla's, burrito's and enchiladas. The queso was also a winner. I would come back here again as you don't need to dress up but it's good food, friendly employees and a clean place.

So the name is less than revealing, but this is a Mex/TexMex place. Fairly typical menu, but a few unique items. Food is fairly tasty, and good portions. Inside is nice decorated for the Colorado theme. Friendly staff. Definitely worth a visit.

I travel a lot. Eat out a lot. I sat at the bar. The service here stinks. The bartender, Deb, never introduced herself. I know her name only because I heard a friend of hers sitting at the bar call her by name. She approached me as if she was doing me a favor by waiting on me. I tried to make conversation. When she did bring my food she just dropped it off at the edge of the bar and walked away Didn't say a word. I reached over to bring it closer and burned my hand pretty good. As she walked by I told her that the plate was extremely hot. She didn't say a word. She came back to bring my silver ware and I mentioned again I burned the heck out of my hand. She said she usually tells people. Never once did she come by to ask how my meal was. Only when after I finished eating and put the napkin on the plate did she ask if I needed anything else. The food was good. But unless you are a regular here, Don't count on any service from the bar.

Great food and great service. A party of seven went here for dinner and definitely enjoyed the experience. The waiter was very attentive to our needs and special requests. Made sure that we had full drinks, plenty of chips and salsa and that our food was exactly what we wanted. I had the two taco meal, one shrimp and the other chipotle chicken. Tender, flavorful chicken and fresh, pop in your mouth shrimp. I highly recommend this place for their yummy margaritas and I'm not even a big margarita fan.

I ordered the Baja Shrimp Enchilladas and they were fantastic! YUMMY!!! They came with rice & beans which is the norm. They were covered with a white cheese sauce and were bursting with grilled shrimp. If I am ever in Hot Springs again...which I will be, I will hit this place up again!

Has a "dirty" look to the place but I miss it. Their beef, chicken, shrimp fajitas are FANTASTIC. That was what we almost always ordered. The spaghetti carbonara was very good. The water is terrible. If you order a soda they will be huge and be refilled very quickly. Do not order water! If we still lived there we'd be going for fajitas .

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
